Sausage Strombolis

1 lb sausage, browned (can use Jimmy Dean precooked crumbles, one bag, as substitute)
2 cups mozzarella cheese
1 egg
Pillsbury pizza dough

Spray cookie sheet with Pam.  Combine sausage, cheese and egg.  Scoop onto pizza dough and fold over.  Cut steam slits, bake at 350 for 20 minutes or so... until bubbling and brown.

To Freeze:
Cook for slightly less time, cool, wrap in foil & freeze.  To cook from frozen, thaw & place on cookie sheet.  Bake at 350 for 5-10 minutes, until warm and bubbly/browned.

I used thin-crust pizza (you could use regular), so my initial cooking time was only 12-13 minutes prior to freezer preparation.  It is best to gauge time based on appearance during cooking.

Chicken & Wild Rice


1 box wild rice with seasoning packet (4.3oz)
1 can cream of mushroom
1 can cream of chicken
1 can water
1 small can mushrooms, drained
6 boneless, skinless chicken breasts/thighs, uncooked
1 cup slivered almonds

1.      Mix together rice, seasoning packet, soups & water.  Stir in mushrooms.
2.      Pour in 8x8 freezer pan.  Top with chicken & sprinkle with almonds.
3.      Double wrap with heavy foil, label & freeze.

COOKING FROM FROZEN:
Thaw & bake uncovered at 350 degrees for 1 hr or until chicken juices run clear & rice is tender.

Slow-Cooked Chili

Ingredients:
1 lb. lean ground beef
1/2 Italian pork sausage
1 medium onion chopped (1/2 cup)
1 can (28 oz.) whole tomatoes, undrained
1 can (28 oz.) tomato sauce
1 tsp sugar
1 to 1 1/2 tsp cumin
2 tsp chili powder
1 tsp dried oregano leaves
1 can (15 oz.) spicy chili beans, undrained
1 can (15 oz.) kidney beans
sour cream, if desired
sliced green onions, if desired 

Cook beef, sausage, and onion over medium-high heat 5-7 min in skillet, stirring frequently, until beef is thoroughly cooked, drain.

In 3-4 quart slow cooker, mix beef mixture and remaining ingredients except sour cream and green onions.  Break up tomatoes with spoon.

Cover; cook on low heat setting 7-8 hours. Top individual servings w/sour cream and green onions.

DINNER DIVAS: Thaw and cook in crock pot 7-8 hours.

Whole Wheat Penne with Chicken.

Ingredients:
1 box whole wheat penne
1 large jar of your choice of Spaghetti sauce
2 cups of shredded mozzarella
16 oz of pre cooked chicken

To prepare:
Boil pasta according to directions, drain pasta, pour into casserole dish.
Scatter pre cooked sliced chicken over pasta.
Pour marinara over entire dish.
Sprinkle mozzarella over entire dish. 

To heat from frozen state:
Allow to thaw in fridge over night.
Preheat oven to 350.
Pull foil away from pasta and place loosely over dish.
Place dish on cookie sheet to prevent spillage.
Cook for 10-15 minutes covered loosely with foil, then remove foil for the last 5-10 minutes.

Beki's Chicken & Veggies

Chicken & Veggies -
Thaw chicken in refrigerator for 24 hours (remember to leave the veggies in the freezer!)
Heat oven to 400* - place foil on baking pan for easier clean up
Cook for 8-10 minutes on each side
After flipping the chicken, put in veggies in the microwave and follow directions on package

Grilled Burger Packs

 

Grilled Burger Packs
This will be my last month to make grill packs. They are so yummy. Next month...fall food! :)
 
Ingredients:
1 pound lean ground beef
1 tablespoon Worcestershire sauce
2 medium green onions, chopped (2 tablespoons)
1 tbs garlic pepper blend
2 cups seasoned potato wedges
1 1/2 cups cut carrots
4 medium green onions, sliced (1/4 cup) 
 
Steps:
  • Heat grill
  • Spray foil with cooking spray
  • Make patties, season patties w/Wocestershire sauce and garlic pepper blend
  • Season veggies with garlic pepper blend 
  • Add potato wedges
  • Fold foil over patties, potatoes, and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
  • 4 Cover and grill packets 4 to 6 inches from medium heat 17 to 20 minutes or until potatoes are tender. Place packets on plates. Cut a large X across top of packet; fold back foil.
